Default Abu fish smoker

Has anybody tried using an Abu fish smoker for trout ?

Please could any users advise me - how easy are they to use, and how long does it take to smoke two fillets from say a 2lb rainbow.

How do you know when the smoking process is finished ?

I used an ABU smoker for many years. The thing with these devices is to follow the instructions to the letter. Normally it takes about 10 minutes to cook a couple of 1 lb trout. A couple of fillets off a 2lb fish would be about the same.

Trout must NOT be overcooked. This is one of the reasons why a lot of people do not like them. Overcooked trout is dry and tasteless.

The way to tell if a trout is done is to insert a fork between the backbone and the flesh. If the flesh pulls away easilily from the backbone it is done. Always make sure your trout is thawed out fully if you are cooking from frozen.
