Does anyone here know of a good guide to tieing this snell knot? I have watched a few videos and am more confused after than before!?

Mark, Might consider this. This is the way I tie my hooks for large catfish, might work for you.
I take a length of mono, Tie both ends (with usual knot)
to hook, strech and tie with loop knot. one could be cut and you still have the other!

So it becomes a double leader?

Yes, Some times fish very rocky areas, Rivers where old wiers have been torn down etc.. Used on single hook for live bait. Wasn't thinking, you are probably useing hair, probably wouldn't apply. But some thing to keep in mind.
I am sure you will get it sorted out.
