Yet again a very informative article Mark and well written, just a couple of questions.
Is that cheesepaste mix designed especially for cold water conditions, it being quite a soft mix, to allow for hardening in the water?
I was a bit surprised that there was no cheddar in the mix, is this because it would make the mix too hard or is there another reason?
