I've got 250g of grated cheese, roughly how many rounds of bread do i need to add?

I'd start with three liquidised, and kneaded into the cheese. If its still soft add a slice at a time after that.

I wouldn't put any bread in at all, it only makes it go mouldy if you try to keep it, plus it will go too hard in very cold water. Use it by itself if its cheddar, it will mould quite easily into a paste. Alternatively you could read this
