I use Okuma Interceptor reels (50 size) which are fine for carp up to 25 pounds on my club waters. Will these be able to cope with fish to 50 pounds on French carp waters?

It's about setting the clutch right for the line you're using.
If you've got balanced tackle and you're playing the fish correctly you should be able to land a fifty with a reel designed for float fishing...
...as long as there are no snags about.
A big pit Shimano would almost certainly last longer though.

plenty of 40+ carp caught on 6010 size bait runners at Les Quis when i was there...
