it depends on the size of the fish, how many people are fishing, and where you are fishing.
big sharks on a boat, you use bronze hooks, when the fish is next to the boat you cut the line leaving the hook in. being bronze they break down and disolve in a matter of days.
small sharks on a boat, land them in a net, pin them down and unhook them.
beach is much the same, big uns they get someone to straddle the fish and pull the snout up, some one else unhooks it.
smaller fish you do it yourself.
to release them. small fish as normal. the bigger ones drag them in to the surf till they are almost able to swim and let them go, the waves will pull them out.
rather then using your hand to unhook them use a "T"bar, a t shaped bit of metal, that you push agaisnt the hook bend while pulling the line towards the point of the hook. this frees out the barb letting the hook fall out. they work great on small fish as the fishes own weight will unhook it. good for deep hooked fish as well.
