Holidays abroad.

I am about to book a holiday for myself, my girlfriend, her mum and dad, and our 7 month old alarm clock whom will be 18 months old by then, for July/August 2003. We will be looking at going to either Spain or Portugal (or somewhere else within 2-3 hours flight).
Has anyone any suggestions of where I can go that encompasses a good family resort and where I can do some coarse fishing within a reasonable taxi drive or walk.
Sea fishing would probably be a last resort, but suggestions are also welcome!
