By the way to kill a carp, forget the usual trout preist - it's not heavy enough. A small hammer is the best tool. Aim one clean blow between the eyes, the eyes will turn up and the carp will never move again.
To clean a carp, remove it's head and allow blood to drain well away. Make a cut from the vent through to the stomach and remove all guts, but most of all scrape out the blood line behind the backbone. I prefer to cook them this way rather than to fillet them.
Personally I can see more carp being eaten in this country in the future. Let's face it there is no shortage of them, in fact it's probably best to kill and eat your carp rather than eat cod, which do need some conservation.
A carp barbie fish-in is being organised on the banks of Redmire next year by the way!
